Back by popular demand, a classic combination of hardwood and 1075 carbon steel that is a must-have for any kitchen. It slices, it dices, and it screams Americana. Old Hickory® has been proudly made in the U.S.A. for over 90 years.

The 79-8" Cook Knife features an 8.13" h 1075 high carbon steel blade.  Hardwood handles with brass rivets.  Overall length approx 13"

Please note that the Old Hickory knives are made with carbon steel.  We have been making Old Hickory since the early 1900's.  Carbon steel knives require extra care to prevent rusting and oxidation of the surface.  Old Hickory should not be placed in a dishwasher or allowed to soak in a sink.  We recommend cleaning the blade with a damp sponge or cloth and dry thoroughly.  Some people go a step further and apply a light coating of vegetable oil to the blades surface. If your blade shows signs of rust, use some steel wool to remove it and then apply some oil to the blade.   To keep the blade razor sharp, use a honing steel, sometimes referred to as sharpening steel, or sharpening stick. After years of use, the steel blade will develop a patina, a darkening which is desirable and an indication of its age.  Old Hickory knives are durable and affordable, but do require special care.

NOTE:  Blade is high carbon steel, not a stainless steel.  Rust and darkening of metal is to be expected.  This is not a flaw, but your proof of quality high carbon kitchen steel.  Keep clean, dry and lightly oiled if you wish to help preserve the blade finish.

The Old Hickory® now come in a beautiful block set. The block is composed of hardwood. It also comes with 5 Old Hickory knives: 3-1/4' Paring Knife, 4' Paring Knife, 6' Boning Knife, 8' Slicing Knife, 7' Butcher Knife.  The hardwood block has capacity for 8 knives adding flexability to this set.  Block measures approximately 7.7" high, 9.8" wide and 4.4" deep

The Operator 7 is huge! It has those classic American fighting knife aesthetics that make it look every bit as good as it will perform.Made out of 5/16" thick 1075, the differentially heat treated blade will be impact resistant on the edge with a very strong spine. The handles start with Tan Canvas Micarta on the bottom sandwiched with Black G10 on top that has a great texture for grip. The entire handle is also over 1" thick once assembled to fill out the user's hand much like an ax or hatchet handle would. It's made for the fighters that don't back down. The rounded handles and hand guard make it a joy to use and the finger choil allows the user to get great precision for finer cuts. The six and a half inches of cutting edge will suffice for the vast majority of cutting tasks, and the weight will help the knife to a lot of the work itself. The Fieldcraft Knife was designed by The Brothers of Bushcraft. The knife is 10 inches long in total, with a blade length of 4 1/2 inches. This makes a compact, but extremely serviceable knife The cutting edge is a modified Scandinavian Grind, which is very effective for carving, skinning and other general woods work. With a rockwell hardness of 56-58, the ease of sharpening is astounding. The handle being made of Red and Black G-10, the handle will never let you down. The "Thumb Scallops", formed on the hilt of the handle offer more comfort and control when using specialized carving and skinning grips.
